Shanghai is the birthplace of Chinese food industry. This major was created in 1950s, which is one of earliest school to set up the major of food science and engineering in China. There was a relatively higher influential power in the field of food processing, food quality control of Shanghai food industry. There are two cultivation direction of this major.
1. Food science and engineering (Food processing technology)
Cultivation Objectives
In this direction, the higher application engineering technician talents are cultivated. After they graduate from this direction, they will have basic knowledge and theory in chemistry, biology, microbiology and food science, they will grasp basic technologies in food processing and manufacturing management, they will have creative consciousness and ability in food processing, they are also able to undergo the product development and manufacturing management in the modern food processing industry.

Microbiology, biochemistry, food chemistry, food engineering principals, food analysis and experiment, food nutrition, food technology series, food machinery and equipment, food plant design, food additive application, food flavor blending technology, food marketing, food logistics, food physical properties, food preservation etc.
Vocation direction
After the students graduated, they could have vocations in food manufacturing and processing, technical management, marketing etc., they could also get a job in food plant design or engineering design of design department, they could also make a further study in food science, food biotechnology and food engineering.
2. Food science and engineering (food quality and safety)
Cultivation Objective
In this direction, the higher application engineering technician talents are cultivated. After they graduated from this direction, they could have fundamental knowledge and technique in chemistry, biology, food science, food engineering principals and food safety and quality control, they can also be suitable for these vocations such as technician, manager, designer, manufacturer, teacher and researcher in the field like modern food processing industries, commercial inspection, hygienic and epidemic prevention, institutes and universities etc.
